The Plates Regulars Order Blind

Every dining room keeps a short list of plates its regulars order without glancing at the menu. Ours was earned gradually, visit by visit, over many seasons.

The Charcoal Salmon Fillet leads it: crackling skin, lemon butter sauce and herb oil blended fresh in our kitchen each afternoon. Beside it, the Wagyu Fillet with truffle mash has held its place on the specials board across three full seasons.
